| How To Cook Simmered Baby Carrots |
Gently peel fresh baby
carrots. Scrape the tops to make sure that there is no dirt. Halve any larger
carrots lengthwise. Cut off the root ends.
Cook the carrots in a
pan of water on the stove. Add salt to the water, as well as a pinch of sugar.
Also add turmeric, which has a sweet, citrusy quality. Then, add star anise, an
aromatic Asian herb. Finally, add butter to the water.
Put a lid on the pan so
that the carrots can steam. The buttery liquid will become a sauce. Simmer for about
eight minutes. Once the carrots are tender, turn up the heat and remove the lid
so that some of the liquid can boil away.
Once the liquid reduces to a creamy sauce, taste the sauce for flavor. Add salt and lemon juice. Stir.
Plate the baby carrots.
Garnish with the star anise. Drizzle the sauce on top. Add parsley.
Alternatively, you can use borage blossoms (which have the flavor of cucumber)
and garlic chive blossoms. Sprinkle pepper on top.
